Pickles, Integral to Indian Meals 1

As a child, I would often tip-toe into my mother’s kitchen and put a hand inside a martbaan (a large ceramic jar) to pick a delicious piece of pickle. She had quite a few jars lined up in the side store cabinet.
Mango, Lemon Sweet, Lemon Salty and, Amla (Indian gooseberry) were my favourite picks.

In-fact I would make up my mind, while approaching the kitchen, which one to pick up for the day.

Mouth-watering story, isn’t it?

Let’s accept it! We savour our flavours. From one generation to another, the pickle tastes have been passed down the line, genetically. No wonder, whenever we put them in our mouths, they not only tickle our tongues but touch our souls as well.

No Indian meal is complete without a delectable piece of pickle. You would be amazed to know that while some of us eat different pickles for the various meals, others would just devour their favourite with every meal.

My husband relishing the mango pickle seed after the meal is a sight to watch. He vouches for its aftertaste and says that it stays there for long.

It is a common notion that Indian foods are generally spicy and smokey.
However, this may only be correct to a certain extent. As lifestyles have become urbane the food preferences have changed from spice to mild spice or even bland. Add a piece of preservative free and freshly prepared pickle to elevate the taste without a worry.
